Are you interested in the name of this article? Many people have a great desire to try national food on coming to Kyrgyzstan, but not all of them have such opportunity, unfortunately. Today, the chances of trips and tours to Kyrgyzstan, Kazakhstan, Tajikistan and Uzbekistan are brighter and the greater amount of people start to investigate the countries of Central Asia with similar history and means of historical significance.
Well, okay, we will open the mystery! Lepyoshka is a unique, indispensable and truly constitutional element of the Kyrgyz culture. It is worth mentioning that Kyrgyz people – are nomadic people and throughout their life they needed to cook something extra delicious, nourishing. One of the most important factors was seen in the accessibility of the products of the nomadic life. So, lepyoshka is flat tandoori bread. They are cooked in a tandoor, or tandyr as it is called in Kyrgyzstan. Bread is delicious and thick. The Kyrgyz people greatly respect bread in any kind.
Those who travel in Kyrgyzstan or other countries of Central Asia, as Tajikistan, Uzbekistan or Kazakhstan tend to hear that in the ancient times, the nomadic way of life led to the change of the tandyr lepyoshka to the ones cooked in oil. Lepyoshka and its sorts differ mainly in the recipe and consistency (humidity) of the dough, as well as the features of forming products. It is made from wheat flour, yeast and salt, without the use of additional ingredients. Crumpet lepyoshka includes raw goods (sugar, dairy products, fats). Bread products "tokoch" or" Nan "consist of the following types: lepyoshka made of sour dough - "kemoch"; crumpet thin lepyoshka – "kattama", layer lepyoshka made of unleavened dough – "chabaty"; fried in fat large round lepyoshkas with cuts in the center – "may tokoch"; it can be of a type – "chelpek","chozmo".
But mainly we can say that bread of any kind plays a great and truly significant role in Kyrgyzstan. Being at the table of the Kyrgyz family amid the tour, it is possible to notice a great amount of lepyoshkas put there. They are torn and put all along the table for everyone to be able to have it. Bread is never wasted, as it is the best addition to any meal. In case of lack of products, bread is the main meal of the family.
